Italian Meatball Sandwich

We are going away to the beach this weekend (yay!!) and I had a few ingredients that I needed to use before they expired, i.e., hot dog buns, Asiago cheese and ground beef; therefore, we had meatball sandwiches for dinner. I thawed out some sauce I had previously made and frozen using Giada De Laurentiis' "Simple Tomato Sauce" I could never get tired of a good, old fashioned meatball sandwich.



Ingredients:

  • 1 lb ground beef
  • 1 egg, beaten
  • 1/4 c Italian style bread crumbs
  • 2 tbsp Parmesan cheese
  • 1/4 c fresh or 1/2 tbsp tbsp dried parsley
  • 1 clove garlic, minced
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tbsp olive oil

  • Hot dog or hoagie rolls
  • Shredded Asiago cheese
  • Shredded Parmesan cheese
Directions:

  • Warm tomato sauce in a medium pan on low heat.
  • In the meantime, in a large bowl, mix together beef and egg until well-blended. Add in bread crumbs, Parmesan, parsley and salt; mix well.
  • Heat oil in a skillet over medium heat. Add garlic, stirring until it becomes fragrant.
  • Form meatballs and drop into skillet, cooking on all sides until done; about 15 minutes or until no longer pink in center.
  • Place cooked meatballs in sauce, simmer until ready to serve.
  • Toast buns. Place meatballs in buns and top with Asiago and Parmesan cheese.
