Sausage Sandwiches

Hooray for manager specials at the grocery store! Italian sausage is generally disgustingly expensive, so I jumped all over it at $1.99/lb! The sell by date may be today but no problem considering we had it for dinner tonight. You honestly cannot go wrong with a good old fashioned sausage sandwich, although there are some fun things you can do to dress it up a bit. Happy Friday!!!!

Ingredients:

  • 1 lb sweet or hot Italian sausage
  • 1 green pepper, cut into thin slices
  • 1/2 large sweet onion, cut into circles
  • 1 clove garlic, minced
  • 2 tbsp olive oil
  • Hoagie or Hot dog buns, toasted
  • 2 tbsp butter or margarine
  • 1/4 tsp garlic powder
  • Shredded mozzarella cheese
  • Tomato sauce
  • Sea salt, to taste
  • Fresh ground pepper, to taste
Directions:

  • In a large skillet, add water up to about one inch. Place sausage in the water and bring to a boil.
  • Turn down heat to a simmer and cover for 20 minutes.
  • Remove pork from skillet and set aside. Remove water from skillet.
  • Add olive oil and garlic to skillet over medium-high heat. When garlic becomes fragrant, add onions and peppers to skillet. Season with salt and pepper. Cook to just about desired doneness and add sausage.
  • Brown sausage on all sides. Remove contents from skillet and set aside.
  • Toast buns. Melt butter and and add in garlic powder. Brush mixture on toasted buns.
  • On one side of toasted bun, add mozzarella cheese. Place sausage in bun and top with onion and green pepper.
  • Top with sauce and serve hot.
