Hubby's Favorite Quarter-Pounder Meatballs

These meatballs are in the top 10 of my husband's favorite meals. They are simple and he loves them and so do I! He likes them with egg noodles in Alfredo Sauce, as evidenced in the picture. I also served them with zucchini.

Ingredients:

  • 1 lb ground beef
  • 1 egg
  • 1/4 c Italian bread crumbs, eyeball it
  • 1/4 tsp onion salt
  • 2 tbsp Parmesan cheese
  • 1 clove garlic, minced
  • 2 tbsp olive oil
  • Fresh parsley, to taste
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
Directions:

  • Preheat oven to 375 degrees.
  • Combine beef, egg, breadcrumb, onion salt, Parmesan cheese, parsley, salt and pepper and mix well.
  • Form into four large meatballs.
  • Place on a rack over a tinfoil-lined baking sheet.
  • Bake for 1 hour, turning over halfway through.
  • Turn the oven temperature up to broil and cook 5 minutes longer (to give it a nice crisp outside), or until meatballs are cooked through.
  • Enjoy!
