Peanut Butter with Blackberry Sauce (PB&J) Pancakes

I tried this recipe from Foodnetwork.com because I thought it would be something different and fun. This turned out very good. You get just the right amount of peanut butter. The "jelly" part of the PB&J is actually a berry sauce and is it amazing!


Pancake Ingredients:

  • 1 c flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 2 tbsp sugar
  • 1 egg
  • 1c plus 2 tbsp milk
  • 1/2 c creamy peanut butter, melted
  • 4 tbsp butter
  • 2 tbsp oil
Blackberry sauce:
  • 2 pints, fresh blackberries (or any berry)
  • 3/4 c sugar
  • 1 c water
  • 1 lemon, zested (optional)
  • 2 tbsp honey
Directions:

  • Combine ingredients for blackberry sauce in a saucepan and bring to a boil over medium heat.
  • Mash berries.
  • Turn heat to low and simmer for about 10 minutes.
  • Strain liquid with a cheesecloth and set aside.
  • In a large bowl, combine all dry pancake ingredients.
  • In another large bowl, combine all wet pancake ingredients.
  • Slowly add dry ingredients to wet ingredients until well-mixed.
  • Heat oil over medium heat in a large skillet.
  • Drop by pancake batter by 1/4 cups.
  • Cook on both sides until golden brown.
  • Drizzle with or dip pancakes in the blackberry sauce.
