Creamy Chicken Caesar Sandwich


If you're a fan of chicken Caesar salad, you will definitely be a fan of this sandwich.  It is incredibly simple to make and is just delightful.  My daughter loved it and asked if we could eat this every night for dinner from now on.  This can be made in under 30 minutes and is perfect for company.  Feel free to pile on sliced tomato, onion, bacon or whatever you prefer on your chicken Caesar salad.  If you're feeding a large crowd, you can use a slow cooker.  The slow cooker directions are at the very bottom of this post.


Ingredients:
Serves 4
  • 1 lb boneless, skinless chicken breast, cut into 1/2-thick strips
  • 2 tbsp olive oil 
  • 2 c chicken broth
  • 4 slices provolone cheese
  • 4 sandwich lightly toasted rolls or crusty bread 
  • Lettuce
  • Salt, to taste
  • Pepper, to taste

Caesar dressing:

  • 1 clove garlic, finely minced 
  • 1/3 c shredded Parmesan cheese 
  • 1/4 c vegetable oil 
  • 3 tbsp mayonnaise 
  • 2 tbsp fresh parsley, minced 
  • 1 tbsp milk 
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1 tsp freshly squeezed lemon juice 
  • 1/2 tsp soy sauce
  • 1/2 tsp red wine vinegar 
  • 1/2 tsp white sugar 
  • Salt, to taste
  • Pepper, to taste 


Braising Directions:


Make the Caesar dressing.  In a medium bowl, combine the garlic, Parmesan, vegetable oil, mayonnaise, parsley, milk, Dijon, Worcestershire, lemon juice, soy sauce, red wine vinegar and sugar.  Season with salt and pepper, to taste.  Cover and chill until ready to serve.  



Heat the olive oil in a large skillet over medium heat.  Season the chicken with salt and pepper and add it to the skillet.  Brown on all sides, about 1 minute.  Pour in the chicken broth and bring it to a boil.  Reduce the heat to low.  Cover and simmer until the chicken is cooked through, about 10 minutes. 


Remove the chicken from the skillet and allow it to cool slightly before handling.  Slice into very small, thin strips.  Salt and pepper, to taste.  Stir the cooked chicken into the dressing.


Spoon a generous amount of the chicken mixture onto a bun.  Lay a slice of cheese and lettuce on top of the chicken mixture.

Slow-Cooking Directions:


Place the chicken and 2 cups of chicken broth in a crock pot.  Cover and cook on low for 4 to 6 hours, or until the chicken is cooked through.  Remove the chicken from the crock pot and discard the drippings from the crock pot.

Slice the chicken into very thin slices and squeeze out the excess juices. Salt and pepper, to taste.

Place the sliced chicken back into the crock pot and stir in the Caesar dressing.  Cover and cook on high setting for 30 minutes.
