It's been a minute since I've last shared a recipe. Over two years to be exact! It was never my intention to go so long... but life! We've experienced a lot of life change between then and now. While lots of things are different, lots of things are the same. We still homeschool my little sous chef, who isn't little anymore. I've made seafood boils in the past, but this was the first time trying it in my Instant Pot. After a few bites, I had to pull out my phone to take a few pictures to share with all of you lovely people! While the photos don't do it justice, it was phenomenal. I'll be dreaming of dipping my crusty bread into the savory seafood broth for a long, long time. So. I'm here to profess my undying love for my Instant Pot. I've made so many wonderful things with it, and it's hard to choose what has been my favorite so far. Chicken that literally falls off the bone, pot roast that melts in your mouth, healthy bone broth, hearty soups, amazingly creamy yogurt... the list goes on and on.<br>

Who knew homemade yogurt could be so easy and tasty to make!? With the Instant Pot, there's no need to go through the tedious steps of heating the yogurt to 180, cooling it to 115 degrees, etc. This is a cold start recipe, meaning you simply dump the cold ingredients into the pot, cover it, use the yogurt setting, and then chill it in the refrigerator! I won't be using store-bought yogurt anymore! I love the fact that I can control exactly what I put into my yogurt!<br>

This is a make-ahead breakfast that is just perfect for the holidays. Think Thanksgiving morning, Christmas morning, New Year's morning, Easter morning, etc. It's very versatile, so you can really add any ingredients that your family enjoys. Assemble it the night before and pop it in the oven when you're ready to eat! So simple and so tasty! Oh, and the presentation isn't bad either, huh?! Next time, I'll use ham or breakfast sausage in place of the bacon, as the bacon kind of gets lost in everything.<br>

In a few days, I'm going to hit the halfway point of my pregnancy, and I have been having some serious cravings! <span style="text-align: justify;">'Tis the season for zucchini! As much as I love a good zucchini cake, after a while, I get tired of the same old zucchini desserts. Enter Zucchini Crisp. Shh! Don't tell anyone, and I promise they'll never know that this crisp has zucchini in it. It tastes just like apples and the consistency is just like apples, too! Really? Really! My daughter, who HATES zucchini, gobbled it up and absolutely loved it. Once I told her what was really in it, she had a complete look of disbelief on her face and said, "How did you get apple flavor inside the zucchini?" She even continued to finish and have seconds after the secret was revealed to her. Give it a try... you will not be disappointed! </span><br>

It's been four months since I started on the Keto diet. I originally intended to use it as a tool to lose the extra weight that I put on over the winter months. After losing the extra pounds, I decided that I'm actually going to stick with it. It's hard to put into words exactly how, but I overall feel better mentally, emotionally, and physically while on this diet. I feel like I have more clarity of mind, which is super important while home schooling... and working and adulting in general. A few weeks ago, we had some wonderful teases of spring weather. I was super excited to take my dog for a long walk and drink in the sun. I got out some shorts and -- gasp! Uncomfortably snug. What made the game even sweeter were these sushi stacks! Don't let the picture fool you; these babies are a lot bigger than your average piece of sushi. The ingredients are layered in a 1 cup measuring cup. Perfectly seasoned sushi rice is topped with a cool, creamy, crunchy, avocado and cucumber layer, and then it's topped off with delectable, spicy, creamy, shrimp. Delicious! They are also very versatile. You can swap out the shrimp with raw salmon, tuna, or cooked chicken. My gears were turning as I was making these, and I've decided to make a buffalo chicken version for the Super Bowl, replacing the avocado mixture with a blue cheese and celery mixture and replacing the spicy shrimp with buffalo chicken! </div>

Well, we're heading into our third week of homeschooling already! I love spending the extra time with my little sous chef and also the freedom that we have in our schedule. Fall is my favorite season for so many reasons, but I have a feeling that homeschooling is going to top my list this year! Speaking of fall, it's not quite here yet, but it sure has felt like it for some time now. This has got to be the mildest (and wettest) summer that I can remember! I've only had to water my garden three or four times this year because of how much rain we've had! Not that I'm complaining. My garden is bursting at the seams, and I've been trying my best to not waste anything and use the things that I have in excess in creative ways. Last week, I made some Cinnamon White Chocolate and Zucchini Cookies, and they were ahhhmazing! Unfortunately, they didn't last long enough for me to blog about them. <br>

This week, I found myself with a lot of extra corn and tomatoes, so I decided to make a salsa to go along with blackened chicken and rice for dinner. This salsa is bright, refreshing, and uses ingredients straight from the garden. While the avocado is optional, it really adds a lovely creamy contrast to the crunchy texture of the salsa. Serve it with tortilla chips, chicken, beef, or seafood!<br>

There have been lots of life changes happening over our way. All good things! For one, we officially began homeschooling this week. I can't believe that I have a 7th grader; she's growing like a weed! It's been a lot of fun so far learning and working together. In history, we're talking about the Rise and Fall of the Western Roman Empire. Today, we're going to be cooking a meal that the Romans would have eaten over a pit of fire. I love the flexibility we have and ability to use our creativity to learn. <br>

On the first day of school, we did something that we probably won't make a habit of doing... I think. We had key lime pie for breakfast! It was seriously a heavenly start to the first day! I think pie should totally be an acceptable form of breakfast, don't you? Oh, and it washes down so well with a hot cup of coffee, too. This was my very first attempt at making a key lime pie, and it turned out delicious! It was light and refreshing, and it wasn't overly sweet. There's a reason this recipe was so highly rated! The only thing I think I would change next time is halving the sugar in the graham cracker crust. </div>

I'm both excited and nervous for this new adventure we're about to embark upon. Seventh grade is no joke, and I've been spending countless hours researching curriculum, obsessing over state laws, etc. One of my plans is to get her cooking more with me in the kitchen during the week, and hopefully I'll be able to incorporate more of her into my blog posts! We were invited to a friend's house for dinner and games over the weekend, and she served this <i>fantastic</i> ziti dish that I hope to eventually get the recipe for! When I was trying to decide on what to bring for dessert, I stumbled across this Peanut Butter Cup Crunch Brownie recipe over at Sally's Baking Addiction. After reading the reviews and recipe, I knew I had to try them right away. I was a little nervous how they would turn out, but, honestly, how can you go wrong with these ingredients?! They have a fudgy brownie base with a center layer of peanut butter cups and peanuts, and then they are topped off with a crunchy layer of melted chocolate and peanut butter with Rice Krispies cereal. Chewy and crunchy all in one bite! Serve them with some vanilla bean ice cream on the side, and they will be sure to please! <br>

I could pour a vat of that velvety goodness over almost anything! Hollandaise sauce is considered one of the hardest sauces to make because it takes patience, requires careful attention, and can be temperamental. Too much heat, and you have a lumpy, yucky mess. It took me a while, but I finally figured it out. I now have a specific spot in my house set up that is intended solely for food blogging! Since we've moved, I've been taking photos in my bay window, which makes it extremely difficult to get a good picture when the sun goes down before dinner. Now I have my lighting and everything set up to where I don't have to rely on the time/position of the sun! Even though artificial lighting isn't as desirable as natural, I'll take whatever I can get during the months of winter! Happy days!<br>

One of my favorite meals to make is pork tenderloin. It's easy enough to make for a weeknight meal but good enough to serve to company. Searing the pork gives it a lovely crust that locks in flavor, and roasting it to an internal temperature of 140 degrees and then allowing it to rest will result in fork-tender deliciousness! I served mine with a side of quinoa and peas.<br>

I'm a little late. Tomorrow is March, and I'm just now sharing my first post of the New Year. While 2015 was very eventful for us, 2016 seems to be giving it a run for its money. I was laid off from my job of nearly ten years, which was sad in itself and wasn't the best timing in the world considering we had just bought our new house. Thankfully, I was blessed to be able to quickly find a new job that I love, <i>and</i> I'm still able to work out of my home! We also just recently decided to adopt a puppy. "Duggy" is a Jack Chi (Jack Russell Terrier/Chihuahua mix). He's happy, full of energy, and extremely smart. We've had him for one month, and he can already sit, stay, fetch, bang-bang (play dead), and shake! Potty training is another story, however. Serves us right for getting a puppy in mid-winter! <br>

Every year, my little sous chef and I get all excited and giggly when we see eggnog in the stores. Making your own eggnog from scratch is very easy and worth the effort. I've had my house decorated for Christmas since the first week in November. If you think I'm crazy, that's okay - so do my friends and family. I've just been so excited to spend our first Christmas in our new house! I did exercise <i>some</i> restraint by not plugging in my outdoor lights until after Thanksgiving. Now that Thanksgiving is over, I can finally let my inner Christmas freak out! It's been amazing experiencing all of these "firsts" in our new home. We have so much to be thankful for. </div>

After our Thanksgiving feast, we had a good amount of leftover turkey. While I do enjoy a cold turkey sandwich, I'm always excited to come up with new ways to use it. After cleaning out our gutters (one of the not-so-fun "firsts") yesterday in the cold, I found myself craving a hot bowl of chili. I decided to use the turkey in the chili and add some pumpkin and sage. It was so good! The pumpkin and sage added a delicious depth of flavor. <br>
