Boiled Lobster & Corn on the Cob

Live lobster was on sale for $6.99 per pound this weekend and I couldn't pass up buying a few pounds.  It's amazing how something so simple to make can be so incredibly succulent.  Don't be intimidated by it - it is an easy, fun and deliciously rewarding experience!  I included butter in the list of ingredients but I'm pretty sure you'll agree that it is definitely not needed.

Ingredients:

  • 2 live lobsters, 1 1/2 pounds each
  • 1 tsp sea salt
  • 4 ears corn on the cob, broken in half
  • Melted butter, for dipping

Directions:

Fill a large pot 3/4 full with water.  Make sure your pot is large enough to cover the lobsters completely with water.  Add the salt.  Bring the water to a rapid boil over high heat.

Grasp the lobsters at the back and lower them head first in the water.  Add the corn on the cob to the boiling water.  Turn the heat down to medium-high.  Cover and cook for 15 to 20 minutes, or until the lobsters are bright red (18 minutes on my stove top).

Remove the lobsters and corn from the water with tongs.

Crack open and enjoy!
