Southwestern Stuffed Pepper Burgers


Grilling out tonight?  Try this delicious new twist on a burger!  Stuffed peppers are grilled, topped with spicy pepper jack cheese, and then paired with a creamy, tangy cilantro-lime dressing.  These burgers are bursting with flavor!  


Ingredients:
Serves 3


  • 1 large green bell pepper 
  • 3/4 lb 80/20 ground beef 
  • 3 hamburger rolls, lightly toasted 
  • 3 slices pepper jack cheese 
  • Lettuce 
  • Fresh cilantro, chopped  
  • Salt, to taste
  • Pepper, to taste

Cilantro-Lime Dressing:

  • 1/3 c tomato, diced 
  • 1 tbsp fresh cilantro, diced 
  • 1/2 tbsp freshly squeezed lime juice 
  • 3 tbsp sour cream 
  • 1/4 tsp garlic powder 
  • Salt, to taste
  • Pepper, to taste 

Directions:

Preheat your grill and heat to medium.  

Slice the top off of the green bell pepper.  Using a paring knife, cut out and remove the ribs and seeds from the center and discard.  Slice the bell pepper into rings that are about 1 inch thick.  You should have enough for three rings.  Bring a pot of salted water to a rolling boil.  Boil the bell pepper rings for 5 minutes.  Drain and set aside to cool long enough for easy handling.  

Pack about 1/4 lb of the ground beef tightly inside of each bell pepper ring.  Season with salt and pepper on each side.  




Place the stuffed pepper on the grill over medium heat.  Grill for 5 to 7 minutes on each side, or to desired doneness.  Place the pepper jack cheese on top during the last minute of grilling.

Meanwhile, make the cilantro-lime dressing.  In a medium bowl, combine the tomato, cilantro, lime juice, sour cream and garlic powder.  Season with salt and pepper, to taste.

Arrange your burgers.  Place some lettuce on each bun and spread the cilantro-lime dressing over all.  Set the stuffed pepper burger on top and garnish with cilantro.
