Peanut-Sauced Shrimp and Pasta

This is a perfect summer meal that is easy, fast and healthy. Yummy!


Ingredients:

  • 12 oz medium shrimp, deveined and uncooked
  • 6 oz pkg dried rice noodles, uncooked
  • 1 tbsp cooking oil
  • 1/2 green pepper, chopped (I have substituted with asparagus, which is even better)
  • 1/2 red pepper, chopped
  • 1/2 yellow pepper, chopped
  • 1/4 c to 1/3 c peanut sauce
  • Sea salt, to taste
Directions:

  • Place noodles in a large bowl and cover with cold water. Allow to sit for 15 to 20 minutes, until noodles become soft.
  • Meanwhile, heat oil in a large skillet over medium-high heat. Add vegetables, cooking for 3 to 5 minutes.
  • Add shrimp. Cook and stir for an additional 3 to 5 minutes, until shrimp are opaque.
  • Add peanut sauce and heat through.
  • Drain noodles. Divide noodles among plates and top with shrimp/vegetable mixture.
  • If desired, mix in some of the peanut sauce with the rice noodles. Season with salt.
  • Serve and enjoy!
