- 2 tbsp olive oil
- 3/4 c whole wheat flour
- 3/4 c all-purpose flour
- 1 tbsp baking powder
- 3 tbsp butter, room temperature
- 1 1/4 c milk, warmed
- 1 egg
- 1 tbsp white sugar
- Toppings (I used bananas, miniature chocolate chips and syrup)
Heat olive oil in a large skillet over medium heat. Sift the whole wheat flour, all-purpose flour and baking powder together in a medium bowl.
Whisk together the butter, milk, egg and sugar. Slowly whisk the flour mixture into the egg mixture, until just incorporated.
Drop the batter into the skillet by 1/4 cups. Cook on both sides until golden brown.
Serve topped with your favorite toppings.
