Pesto Sauce

I have never made pesto before and I have been wanting to try for quite some time now. I cannot believe how great this turned out!


  • 2 c spinach
  • 1/2 c walnuts or pine nuts
  • 1 clove garlic, smashed
  • 3 1/2 oz Asiago cheese, cut into chunks
  • 1/2 c extra-virgin olive oil
  • Sea salt, to taste
  • Freshly ground black pepper, to taste

  • Place spinach, walnuts, garlic and cheese in food processor.
  • Add olive oil while blending until mixture forms a loose paste.
  • Season with salt and pepper.
  • Add to warm pasta, cold pasta, chicken, etc.
