Seafood Alfredo & Broccoli


You can't go wrong with a warm pasta dish with creamy alfredo and seafood!


Ingredients:
  • 2 tbsp olive oil 
  • 1/4 c onion, minced 
  • 1 c broccoli, cut into bite-size pieces 
  • 2 cloves garlic, minced
  • 1/2 lb shrimp, peeled and deveined
  • 1 lb crab, chopped
  • 1 lb pasta
  • 2 c heavy heavy cream, room temperature
  • 1/2 c Parmesan cheese
  • 1/4 c butter
  • Sea salt, to taste
  • Fresh ground pepper, to taste
  • 1 tbsp fresh parsley
  • Optional:  Mozzarella cheese

Directions:


Boil a large pot of salted water.  Cook pasta as directed on box.  Drain and keep warm.


Meanwhile, heat the olive oil in a large skillet over medium heat.  Add the broccoli and season with salt and pepper.  Cook the broccoli for 5 minutes.  Stir in the onion and cook for 3 minutes.  Add the shrimp and garlic and cook for 5 minutes longer, or until the shrimp is cooked through and the onions are soft.  


Melt the butter a large sauce pan over low heat.  Stir in the garlic and stir in the heavy cream.  Add the Parmesan cheese and stir until the sauce thickens.  Do now allow the sauce to come to a boil.  Season with salt and pepper, to taste.  Thicken the sauce with more Parmesan or thin with more cream, to desired consistency.  Add the crab and parsley to the sauce and cook until warmed through.  


Stir the shrimp-broccoli mixture into the sauce.  Pour the sauce over the cooked pasta and toss.  Season with salt and pepper.  Sprinkle with more Parmesan or mozzarella cheese and garnish with parsley, if desired.
