Pancake Ingredients:
- 1 c flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 2 tbsp sugar
- 1 egg
- 1c plus 2 tbsp milk
- 1/2 c creamy peanut butter, melted
- 4 tbsp butter
- 2 tbsp oil
- 2 pints, fresh blackberries (or any berry)
- 3/4 c sugar
- 1 c water
- 1 lemon, zested (optional)
- 2 tbsp honey
- Combine ingredients for blackberry sauce in a saucepan and bring to a boil over medium heat.
- Mash berries.
- Turn heat to low and simmer for about 10 minutes.
- Strain liquid with a cheesecloth and set aside.
- In a large bowl, combine all dry pancake ingredients.
- In another large bowl, combine all wet pancake ingredients.
- Slowly add dry ingredients to wet ingredients until well-mixed.
- Heat oil over medium heat in a large skillet.
- Drop by pancake batter by 1/4 cups.
- Cook on both sides until golden brown.
- Drizzle with or dip pancakes in the blackberry sauce.
