My little girl is in 1st grade already and I miss her so much from the minute she gets on the bus. While I have no part in what she does at school (unless I'm helping out in the classroom that day), I feel a certain satisfaction knowing that I can at least control what she eats. Quesadillas are a really fast, fun and flexible lunch that you can make. Your child doesn't like Swiss cheese and apples? Try American cheese and ham instead. The options are endless!
Ingredients:
- 1 whole wheat 12-inch tortilla
- Deli turkey breast, 3 slices
- 1 tbsp Dijon
- 1 tbsp honey
- 1/4 c baby spinach leaves
- Apple, 6 thin slices
- 1/4 c shredded Swiss cheese
- 1 tbsp olive oil
Combine the Dijon and honey in a small bowl and set aside.
Lay out a tortilla. Place the turkey breast on one half of the tortilla. Spread the honey-Dijon sauce on top of the turkey, add the spinach and apples and sprinkle the cheese on top.
Fold in half. Heat the olive oil a large skillet over medium-high heat. Cook the quesadilla on both sides, until it is golden brown and the cheese is melted. Allow to cool for one minute before cutting into triangles.
Serve and enjoy!
