Crock Pot Balsamic Chicken over Pasta

This delicious pasta dish is hearty, healthy and full of flavor.  My family loves the rich, tart and sweet taste of balsamic vinegar - it's definitely a favorite!  If you're unsure about how much balsamic vinegar is right for you, start off by using 2 tbsp.  You can always add more once it's done cooking.  In addition to the amount called for in the recipe, I tend to drizzle about 1/2 tsp more on top of my plate.  Yum!

Ingredients:
Serves 4
  • 1 lb boneless, skinless chicken breast, cut into 1-inch pieces
  • 3 tbsp olive oil
  • 3 tbsp balsamic vinegar
  • 1 large tomato, chopped
  • 1/4 c onion, minced
  • 2 garlic cloves, minced
  • 1 rosemary sprig, chopped
  • 1 tsp dried basil
  • 1/8 tsp dried oregano
  • 1/4 tsp sugar
  • Salt, to taste
  • Pepper, to taste
  • Parmesan cheese, shredded
  • 1 lb pasta, cooked
Directions:

Pour the olive oil in the bottom of the crock pot.  Place the chicken on top.  Season the chicken with salt and pepper.

Drizzle the balsamic vinegar over all.  Top with tomato, onion, garlic, rosemary, basil, sugar and oregano and stir to combine.

Cover and cook on low for 5 to 6 hours or on high for 2 1/2 to 3 hours .  Season with salt and pepper, to taste.

Pour over cooked pasta and sprinkle Parmesan cheese over all.  At this point, I drizzle a little extra balsamic vinegar over my plate.

Enjoy!
