Baked Oatmeal Cups with Apple Cinnamon & Walnut

Start off your day with this warm, healthy breakfast that's baked in your own personal apple cup.  So good, it's hard to believe they are under 200 calories per serving!

Serves 2
175 calories per serving 

  • 2 apples
  • 1/4 c quick cooking oats 
  • 1/4 c fat-free milk
  • 1 tbsp chopped walnuts
  • 1 tsp brown sugar, plus more for sprinkling
  • 1/8 tsp ground cinnamon 
  • Pinch salt


Preheat the oven to 350 degrees.

Prepare the apple cups.  Cut off the top of each apple.  Using a paring knife, carefully cut around the inside of the apple, leaving about 1/4 inch of the flesh intact.  Scoop out the flesh with a spoon.  Separate the core from the flesh and discard the core.  

Dice the apple flesh and place it in a bowl.  You should have about 1/2 c of flesh.  Add the oats, milk, walnuts, brown sugar, cinnamon and salt to the diced apple.  Taste and adjust add a little more brown sugar, if desired.  

Spoon the apple mixture inside the hollowed-out apple cups.  Sprinkle more brown sugar on top, if desired.  Bake in the preheated oven for 35 to 45 minutes, or until the apples are soft.
