Coconut & Walnut Crusted Cod

I love this coconut and walnut crusted cod.  The toasted walnut pairs well with the sweet coconut, and it doesn't overpower the fish.  Easy to make, healthy, and ready in 15 minutes!  


  • 1 lb cod
  • 1/2 c walnuts, finely chopped
  • 1/4 c sweet coconut flakes
  • 2 tbsp Panko bread crumbs 
  • 1/4 tsp onion salt
  • 1/4 tsp garlic powder 
  • 1/8 tsp pepper
  • 2 tbsp butter, melted 
  • Salt, to taste 


Preheat the oven to 425 degrees. 

In a medium bowl, combine the walnuts, coconut, Panko bread crumbs, onion salt, garlic powder, and pepper.  Stir in the butter and mix well.

Season the fish with salt and pepper.  Evenly sprinkle the walnut mixture on top of the cod.  Bake on a lightly greased baking sheet until the cod is cooked through, about 10 to 12 minutes.
