Peanut Butter & Chocolate Chip Granola Bars

These are our favorite granola bars.  They're amazingly good, super easy to make, perfectly chewy, and they won't crumble on you!  The only problem you'll have with these is suppressing your urge to eat them all!  

Note:  You can substitute the honey with additional maple syrup, if desired.  


  • 1 c crunchy peanut butter 
  • 1/4 c maple syrup
  • 1/4 c honey 
  • 2 c quick cooking oats 
  • 1/3 c sweetened coconut flakes 
  • 1 tbsp wheat germ 
  • 1/2 c chocolate chips 

Line an 8 x 8-inch baking pan with parchment or wax paper.  

In a large bowl, add crunchy peanut butter, maple syrup, and honey.  Microwave on high in 20-second increments, stirring in between, until the mixture is smooth and creamy.  

Stir in the oats, coconut, wheat germ, and chocolate chips.  Pour the mixture into the prepared pan, and press it down evenly.  Place chocolate chips on top, if desired. 

Freeze the mixture for 25 minutes.  Remove from freezer, and cut into bars.  

Enjoy!  Store in an airtight container.
