Ingredients:
- Flounder fillets
- 2 tbsp olive oil
- 2 tbsp butter
- Freshly-squeezed lemon juice, to taste
- Sea salt, to taste
- Fresh cracked pepper, to taste
- Paprika, to taste
- 1/4 c flour for dredging
- Wash fillets in cold water and pat dry.
- Season both sides with salt, pepper and paprika.
- Dredge fillets in flour.
- Heat olive oil and butter over medium-high heat in a skillet.
- Cook fish for approximately 3 minutes per side, until brown and crispy.
- Remove fish to serving platter. Lightly sprinkle with lemon juice, if desired.
