Ingredients:
- 12 oz medium shrimp, deveined and uncooked
- 6 oz pkg dried rice noodles, uncooked
- 1 tbsp cooking oil
- 1/2 green pepper, chopped (I have substituted with asparagus, which is even better)
- 1/2 red pepper, chopped
- 1/2 yellow pepper, chopped
- 1/4 c to 1/3 c peanut sauce
- Sea salt, to taste
- Place noodles in a large bowl and cover with cold water. Allow to sit for 15 to 20 minutes, until noodles become soft.
- Meanwhile, heat oil in a large skillet over medium-high heat. Add vegetables, cooking for 3 to 5 minutes.
- Add shrimp. Cook and stir for an additional 3 to 5 minutes, until shrimp are opaque.
- Add peanut sauce and heat through.
- Drain noodles. Divide noodles among plates and top with shrimp/vegetable mixture.
- If desired, mix in some of the peanut sauce with the rice noodles. Season with salt.
- Serve and enjoy!
