There aren't very many things that I enjoy more than spending lazy Saturdays with my family. Sleeping in, slowly awakening between the cold sheets, and knowing that you have no obligations for the rest of the day other than to relax and spend time together -- it can't get much better than that! On those glorious lazy Saturdays, we start the day off by sitting down together as a family and enjoying a hearty brunch. This Saturday was one of those days. When I asked what we should have for brunch, my husband requested eggs over easy, home fries and toast... simple but one of my family's favorites. I have made home fries a number of ways but this is my favorite way to make them. They have a crisp exterior, are tender on the inside and are delicious. What do your lazy Saturdays consist of?
Ingredients:
- 2 russet potatoes, peeled
- 2 tbsp butter
- 1/8 tsp onion salt
- 1/8 tsp garlic powder
- Pepper, to taste
Cut the potatoes in half lengthwise and then cut into 1/4 inch slices.
Heat the butter over medium-low heat. Add the sliced potatoes and season with onion salt, garlic powder and pepper. Cover and cook for 10 minutes.
Turn the potatoes over. Cover and cook for another 8 to 10 minutes, or the potatoes are cooked through and golden brown.
