One Year Ago: Chocolate Chip Caterpillar Pancakes
My husband special requested this meal for dinner tonight. As I have said before my family is crazy about Chinese food. This is another meal that is perfect for your busy week nights. Be sure to have all of your ingredients measured, chopped, prepped etc. before you start cooking. This meal is finished cooking within minutes of the oil being preheated in your skillet.
Ingredients:

- 1/4 c vegetable oil
- 1 lb fresh green beans
- 1/2 lb boneless, skinless chicken breast, cut into 1/4-inch-thin slices
- 2 tbsp soy sauce
- 2 cloves garlic, minced
- 1 tbsp hoisin sauce
- 1 tsp sesame oil
- 1 tbsp sesame seeds
- 1 tsp hot sauce
- Optional: 1/4 c cashews, coarsely chopped
- Salt, to taste
- Pepper, to taste
- 2 cups cooked white rice
Heat the oil in a large skillet or wok over medium-high to high heat. Once the oil is shimmering, add the green beans, cooking and stirring until they wrinkle, about 5 minutes. Remove the green beans and allow them to drain on paper towels.
Add the chicken and soy sauce to the skillet. Brown the chicken for 1 minute. Stir in the garlic and continue to cook and stir for 1 minute.
Add the green beans, hoisin sauce, sesame oil, sesame seeds, hot sauce and cashews to the skillet. Stir and cook until the chicken is cooked through, about 1 to 2 minutes. Season with salt and pepper.
Serve over white rice. Don't forget to pour some of that delicious pan sauce over your white rice!
