Here is a homemade, healthier alternative to those store-bought "fruit" snacks. They are easy and a lot of fun to make, especially with kids. The texture is different than your traditional fruit snack. They are firm but have a more sponge-like consistency. Try experimenting with a variety of your favorite berries! Depending on the sweetness of the strawberries themselves, you may or may not want to add the optional confectioners' sugar. Just be sure to taste the strawberry mixture before placing it in the refrigerator to set.
Yields approximately 20 pieces, depending on how they are sliced

- 1 c ripe strawberries, coarsely chopped
- 1 tbsp honey
- 1 package (0.25 ounces) unflavored gelatin, such as Knox
- Optional: Confectioners' sugar, to taste (does not count towards the total calories listed)
- 4 inch springform pan, or similar size
Blend or process the strawberries and honey together until smooth.
Heat the strawberry mixture in a small sauce pan over medium heat. When the mixture comes to a boil, slowly and vigorously whisk in the gelatin. Continue whisking for 1 minute. Taste the mixture and whisk in confectioners' sugar, to taste.
Remove the strawberry mixture from the heat and pour it into a lightly greased 4-inch springform pan. Chill in the refrigerator (or freezer for faster setting) until the mixture is set.
Slice into small squares. Enjoy!
