Ingredients:
Serves 2
- 4 slices of 100% wheat bread
- 2 tbsp olive oil
- 4 tbsp basil pesto
- 1 ball fresh mozzarella, room temperature, sliced 1/4 inch thick
- 1 large tomato, sliced 1/4 inch thick
Directions:
Heat a large skillet over medium heat.
Brush the outside of each slice of bread with olive oil. Spread 1 tbsp of the pesto on the inside of each slice of bread. Place the mozzarella and tomato on two of the slices of bread. Top with the remaining two slices, pesto-side down to form two sandwiches.
Grill the sandwich in the skillet until golden brown, about 2 to 4 minutes per side.
