It took me an embarrassingly 45 minutes to remember my login information on blogger. I blinked, and it's been 3 1/2 years since my last blog post. Lots of life has happened between May 2021 and now. My homeschooler has graduated high school and is about to get her Associates in Early Childhood Education this spring, and my son began kindergarten this year. Through it all, my love of cooking hasn't faltered.
My husband has recently joined me in my low carb, no processed foods eating habits, and it's been a lot of fun experimenting with and enjoying some pretty fabulous recipes together. He recently stumbled across a recipe on Instagram, and we decided to give it a try this weekend. This was my first time using almond flour. While I wasn't a fan of the price, I am a fan of the nutritional information as well as the cooking results.
These were not only simple and quick to whip up, but they were delicious! Each bagel bite tastes like an everything bagel, has a lovely crunch on the outside, and is warm and crumbly on the inside. The consistency isn't quite the same as a bagel - more like a crumbly cake. Slather a smidgen of whipped cream cheese on top to take it to the next level.
These can be stored in the refrigerator.
Ingredients:
Recipe by Justin Richard
Yields 6 bagel bites
(4 net carbs per bite)
1 c almond flour
1/2 tsp baking soda
1/2 c Greek yogurt
Everything Bagel seasoning
Preheat oven to 400 degrees.
In a medium bowl, stir together the almond flour, baking soda, and yogurt until combined. Form dough into 6 balls and roll in Everything Bagel seasoning to coat.
Bake in preheated oven for 20 minutes.
Cool for 5 minutes before serving. Serve with whipped cream cheese.
Enjoy!

Do these need to be refrigerated?
ReplyDeleteThese are really good! I didn’t have the EVERYTHING season do I did the egg wash and sprinkled with flaked sea salt! Love the texture which holds up well with cream cheese or preserves.
ReplyDeleteI made these twice and used a small cookie dough baller so my bites were smaller but really good! Made about 10 cookie size bites. These will be in my go to stash for quick tasty snack 😊
ReplyDeleteTried your recipe as I could not remember measurements from the one I usually use. Have to tell you, the bites tasted just awful, and went flat immediately out of the oven. I believe the issue might be that youhave listed 'soda' rather than 'powder'.
ReplyDeleteYes, the original recipe was baking powder, which I used, and they came out fine.
DeleteI followed the recipe then read the reviews before baking and added baking powder. They turned out great - with 1/2tsp of both baking powder and baking soda. Super fluffy. I also made them with just baking powder and they were good, but not as fluffy. I think I’ll continue making with both.
DeleteHello! We purchased a bottle cooler for the back area of our bar from McDonald Paper https://mcdonaldpaper.com/atosa-mbc24gr-24-inch-horizontal-bottle-cooler We are very satisfied—it is durable, spacious, and quiet. Drinks cool quickly, and the shelves can be adjusted to accommodate different bottles. The store provided professional service, everything was clear and unhurried.
ReplyDeleteThese were awful
ReplyDeleteYou should correct the recipe to say baking POWDER, not baking SODA. Huge difference.
ReplyDeletePlease correct the recipe to say baking POWDER, instead of baking SODA. It is not the same thing!
ReplyDeleteOven at 400 for 20 minutes burned the seasoning. My season blend was very salty.
ReplyDeleteMade them for first time this morning, they were really good actually! a tiny bit salty so I think I’ll just put the everything seasoning on the top next time but yeah I cut them in half after they cooled and put a tiny bit of whipped cream cheese and they were very satisfying!
ReplyDeleteHi I've made these before but I added a little corn n corn flavoring n made corn balls mmmmmmm

ReplyDeleteThis is a very important breakdown. Focusing on carbohydrate quality and personalized timing is truly the most effective approach for managing diabetes, as one size definitely does not fit all.
