Mexican Rice & Black Beans


This is one of my favorite Mexican side dishes!  It is spicy, garlicy and very flavorful.  I made Chipotle Shrimp Tacos for my family the other night and it was the perfect complement to them.  If you're a vegetarian, you can serve this as a main dish.  A word of caution:  A little bit goes a long way - it is very filling!

Chipotle Shrimp Tacos with Black Bean Pico de Gallo


I've been in quite the Mexican food mood recently.  After making that delicious Black bean Pico de Gallo, I decided to use it as a topping with some chipotle shrimp tacos for dinner one night.  These are definitely a contender for my favorite taco!  The tangy Pico de Gallo is a perfect complement to the smoky and slightly spicy shrimp.  I served this with a side of Mexican rice (recipe to come).

Fresh, tangy, slightly sweet, spicy, crunchy, healthy, low in calories... the perfect condiment to dip your tortilla chips into or top your tacos with!  Pico de Gallo is an uncooked Mexican condiment that contains much less liquid than salsa, so it can be used as a main ingredient in your favorite Mexican dishes.  It's very versatile, so you can add or subtract ingredients to your own taste.

Slow Cooker Spicy Chicken Tortilla Stew


Make a New Year's resolution to have a healthy diet?  Try this delicious spicy chicken tortilla stew!  It's healthy, low in calories and oh, so good!  Simply throw the ingredients in your slow cooker in the morning and return home in the evening to the amazing smell of Southwestern goodness.  

Tip:  To save a little bit of time, you can substitute the "Southwestern Seasoning" ingredients listed below with an envelope of taco seasoning.

Sausage, Caramelized Onion & Mushroom Stuffed Shells

The holidays are over, school is back in session, businesses spring back to life, and the dieting begins!  2012 was a year full of love, good health, and joy in my family and I am hopeful for an even better 2013 for my family and for yours as well.

On to the recipe.  Let me tell you, there is just so much goodness packed in these shells!  They will have your family reaching for more... and more.  Caramelized onions really do take quite a bit of time to make.  If you're feeling ambitious, you can make them ahead of time and store them in the refrigerator until you're ready to use them.  If that isn't an option and you're pressed for time, you can just cook the onions until they are tender.  The results won't be as good, but they will be good!
